Easy Layered Cabbage Rolls

We always eat cabbage on New Year's Day and also black eyed peas (which I love and don't know why we don't eat those more often). Here's the cabbage recipe I make every single year. It is easy and we love it.

Easy Layered Cabbage Rolls

1/2 head cabbage, coarsely chopped
1 lb ground beef
1/2 small onion, chopped
1/8 tsp garlic powder
1/4 tsp salt
dash pepper
1/2 tsp chili powder
1/3 cup uncooked rice
1 can condensed tomato soup
1 soup can full of water
1 tbs brown sugar

heat oven to 350°. Place cabbage in a greased baking dish (I use one that is about 7x11x2). Set aside. Brown ground beef w/ onion and drain. Add remaining ingredients to ground beef and stir well. Spoon evenly over cabbage. Cover w/ foil and bake for about 1 hour to 1 hour 15 min.

Hi Gale, I just bookmarked your blog. I love your pic on SCS. I have been making this cabbage roll casserole for years. Mine is for a larger size (5 quart) and a little different with the liquids. This is so easy to make and I usually make it the night before and put it in a timed oven so it is ready for when we come home at night.

Yum! We make cabbage rolls for Christmas Eve every year as my mom used to. This would be a easy way to get the same flavor without the bother of rolling the cabbage, and easy enough for the rest of the year. Thanks for sharing this.
